MS Midsund, the newest boat to the fleet of the Nybonia shipping company, has now caught and shipped its first batches of fresh Atlantic bluefin tuna in nano ice to the Japanese market. Project manager and skipper on board Markus Nygård says they are now well underway with catching the new batch to be shipped.

There was great excitement at the beginning about how the Japanese market would respond to the products and what prices they could achieve. Surprisingly, very good feedback was given already on the first shipment and MS Midsund hit the quality parameters that the Japanese value so highly. Line is used as the catching method and the fish is taken on board in a gentle and efficient way.

The key to success – efficient and rapid cooling

In addition to careful handling of the fish through good catching methods, rapid cooling, good bleeding and continuous cooling are important prerequisites for the quality to be categorized as a first-class premium product.

Rapid cooling to around 0 C° is absolutely necessary to slow down the metabolic processes that lead to the decomposition of the fish meat. With rapid cooling and continuous maintenance cooling, Rigor Mortis (the rigidity of death) can be postponed and provide a larger time window for pre-rigor processing of the product. Correct handling of cooling and timing therefore provides a final product with optimal taste, texture and shelf life.

Two NM 3202 machines, with a total of four ice generators, ensure that ice and supercooled water are supplied at all times. Produced and stored in a distribution tank in advance to distribute larger quantities of ice in a short time. During the blanching phase, fresh supercooled seawater can be produced and supplied to the blanching phase at the same time. This ensures flexible and good capacity.

Tore Sjøvik, CEO of nanoICE AS, thinks it is great that the company has the opportunity to be a partner in both supplying equipment and developing methods for how the advantages of this type of cooling are marketed and used to benefit users.

See our recommendations for how to use different types of cooling in different phases in the capture and processing chain

Salthammer Båtbyggeri AS (SHB) overleverte 14. juni 2024 ‘‘C Provider’’ til Charvest AS.

On 14 June 2024, Salthammer Båtbyggeri AS (SHB) handed over “C Provider” to Charvest AS. The vessel “C Provider” is the second building delivered to Charvest AS from SHB.

The contract was signed in April 2023 and the vessel, which has been built in its entirety at the shipyard at Vestnes municipality, is a combined service and bleed-boat – M19 designed by Møre Maritime AS. With a maximum length of 19 m and a width of 9.4 m. The boat is tailored for bleeding, but it can also be used as a service boat equipped with a large crane, possibilities for towing and plenty of deck space.

The vessel is equipped with the industry’s largest battery for this type of vessel, which makes it possible to operate emission-free on the seashore for up to 24 hours. The battery pack together with the hybrid propulsion line makes the boat flexible and able to optimize energy consumption for any activity.

Charvest AS, together with Møre Maritime AS and SHB, further developed ‘Csaver’, the first boat that SHB delivered to shipping companies back in 2020, into ‘C Provider’, which is delivered today, based on experience and new technology. “C Provider” is in this class and a very advanced boat with flexible solutions for optimizing energy consumption on board. The delivery of ‘C Provider’ further strengthens Salthammer’s position as a leading supplier of technologically advanced vessels to the aquaculture industry, says Lasse Stokkeland, general manager at the yard.

Delivery of equipment from NanoICE

NanoICE has delivered an ice machine of the type NM 3202 with flow-ice generators for ice production, as well as an automation solution for controlling UV cleaning and seawater pumps from the ice machine. With the nano ice’s properties, one ensures efficient cooling and bleeding, in mobile holdingtanks on the boat’s deck.

Despite its compact size, the ice machine will produce close to 10,000 liters of ice per day. The machine produces ice directly from the generators via hoses, where the ice are beeing distrubuted directly into the tanks, without the need for manual work from the boat’s personnel.

The nano ice’s unique properties help the fish to bleed quickly and prevent heat build-up in the raw material during this important and heat-sensitive processing stage. This provides increased quality and good conditions for good temperature control.

❄ With nanoICE, you can ensure super-cooling i.e superchilling of marine products in the entire value chain from Catch to Plate using ice or super-cooled water from our ice machines.

What is super cooling/ superchilling?
Supercooling as a principle is very simple and means that the product is cooled down to between 0 and -2 degrees without being frozen. If you start this early in the process, you need less ice and cooling later in the process to maintain a low core temperature in the product. Nano-ice is made from seawater, is liquid and maintains a temperature of between -3 and -1 degrees. This provides fast and efficient cooling of the products.

Reduce greenhouse gas emissions: With supercooling, the ice becomes redundant, and fewer trucks and planes are needed to transport the fish. This reduces greenhouse gas emissions from the fuel.

Save transport costs: Fewer lorries on the road also naturally mean less transport costs.

Preserve quality for as long as possible: It usually takes about a day before the temperature of the fish has dropped below 0 degrees. Super-chilled fish reaches this temperature much faster, without being frozen.

Through research, the following quality benefits have been documented:

Longer shelf life: When fish or animals are slaughtered, they go through a process that eventually ends in putrefaction. Supercooling helps to extend the first phase, where the fish is still of top quality, and thus has a longer shelf life than fish that is placed on ice. The shelf life of salmon chilled with ice is around 20 days, while that of super-chilled salmon can be over 30 days with storage at -2 °C.

Retain liquid during storage: All fish lose liquid during storage. Fillet that is placed on ice has a so-called drip loss of 0.18 per cent per day. Gutted, super-chilled salmon has almost no drip loss during the first four to five days. A study has also shown that super-chilled, vacuum-packed salmon fillets had less drip loss than traditional chilled fillets.

Better yield: Firmer fish gives more fillet after filleting, and it has also been shown that the yield of cooked fish is higher when it has been supercooled.

Several advantages are also likely, based on knowledge of the raw material and on the basis of experiences from producers who have super-chilled fish:

Firmer in the fish: Producers who have delivered super-chilled salmon to their customers report fewer complaints about soft fish and fillet splitting.

Better taste: Producers have received good feedback on the taste of super-chilled salmon.

Storage temperature in cold storage/fish hold ideally set to -1°C in order to preserve the nano-ice for the maximum period of time, since nano-ice will cover the fish surface 100% but DOES NOT NEED TO MELT at +2-3°C as conventional ice in order to chill the fish.

Make sure to use ONLY DRAINED TUBS OR BOXES.

35-45% medium thick to thick nano-ice solution at -2,2°C to -3,0°C is used for this purpose, to chill the fish as quickly as possible to the desired and most ideal core storage temperature of -0,5 to -1°C.

For 3-5 days fresh storage: If ice is used straight from the machine without using an agitated nano-ice storage tank, produce ice in the maximum thickness at 35-40% ice concentration.

A setup with a nano-ice system without a nano-ice storage/buffer tank can be suitable for long-line boats and 2-3 day boats, when delivering thick nano-ice into fish boxes or tubs, as the catch is fed evenly into the process from the line. Also in processing facilities when the machine is set to constantly feed thin to medium thick ice into chilling/holding tanks in the processing area.

For 1-3 weeks fresh storage: Thick 40-45% drained nano-ice pumped from a nano-ice buffer/storage tank onto fish in boxes or tubs.

A setup with a nano-ice system with a nano-ice storage/buffer tank is required/highly recommended for all fishing vessels receiving their catch in large volumes each time, like trawlers, gillnetters etc. The machine ́s ice production capacity is set to re-fill the nano-ice storage/buffer tank between catches. (…during 3-5 hour towing etc.)

The thickest nano-ice at 40-45% ice concentration is produced in the machine and delivered into the nano-ice tank. Temperature in the ice when entering the tank is estimated at -2,8°C to -3,2°C and salinity at 3% on average.

NanoICE has delivered two models of the NM-3202 ice machine to Nybonia Hav and Nybonia Kyst

NanoICE has supplied ice machines for use on board MS Marie, where the main purpose is to cool whale meat. MS Marie is a coastal vessel that is 21 meters long. Built in 1957, and has undergone continuous improvements. Marie has/ had quotas for NVG herring, mackerel, cod, blue halibut and whale.

Quality and control

Whale meat requires gentle treatment and must undergo a careful process to keep control of maturation and temperature. Here, nanoICE has proven to be a good solution in the application and use of the ice, both early in capture but also during storage and packaging.

Flexible solutions

For the delivery of the second machine, the purpose of this is to have a flexible solution, where you can use the machine in several areas and even move it between boats as the boats go to the field to fish. Here, the purpose was to solve the needs to be able to take care of extra cooling capacity when needed in bulk lifters and bleeding tanks, but also to be able to supplement with nanoICE directly into the RSW circuit. This in order to quickly reduce the temperature of the water on board in advance, but also to be able to maintain temperature when fish with a high temperature comes aboard.

6 benefits of nanoICE for every aquaculture producer and fish processor

Did you know that fish consumption in Europe reached an all-time high in 2014? The industry reached a massive 24kg per capita, while making sure that product would be of highest quality possible as well as delivered to the consumer in a timely manner. A 2019 study by the EU Food Safety Authority confirms “consumers and citizens show increasingly pressing expectations towards food, to issues such as health, origin, convenience, environment, climate change, animal welfare”.

It is anticipated that fish production will increase by 25% in 2024, and for aquaculture producers and fish processors to adapt and meet the increasing and specific consumer demand more easily, they are going to need the right cooling solution to generate minimal weight loss, maximum consumer benefit, and maximum sales value.

This is provided by the next-generation technology, nanoICE, which uses molecular ice particles that keep food fresh for longer. nanoICE does not use chemicals or freezing to preserve seafood simply sea water, or by mixing fresh water with salt. Our machines were designed to be plug and play, versatile and easy to use and the results hold some unique benefits for every aquaculture producer and fish processor.

nanoICE cools your product quickly to the core

nanoICE is a granular free ice solution that spreads across the entire product both on the surface and inside all cavities on a molecular level. Deep contact enables the ice particles to rapidly drop the temperatures all the way to the product core without freezing. This eliminates the hotspots and ensures even temperature.

nanoICE protects products from bacteria and prevents spoilage

Since nanoICE fully coats the product surface, it creates a physical barrier to protect it from the formation of bacteria. nanoICE prevents spoilage and allows you to sell your product at a better price due to its higher quality.

nanoICE increases weight retention by up to 15%

This means you won’t see such a dramatic weight loss (or drip). Instead, you will enjoy a higher sellable weight and a product that has retained its nutritional value. Once again, this allows for an increase in price and improvement in your profit margins.

nanoICE preserves the look of the products and extends their shelf-life

Whether it is seafood, meat, poultry or fresh fruits and vegetables, nanoICE will not cause any bruising, breakage, or scratches, because its texture is silky soft and extremely gentle to any surface. This means it holds substantial benefits over flake ice, for example, across the value chain from catch to plate. You will be able to meet all elements of your customers’ expectations.

nanoICE devices are modular and easy to operate with

As far as practical usage is concerned nanoICE machines are compact, modular, easy to set up and just a bliss to operate. Once installed, the device fits most operations both off- and on-shore. You only press one button to start it, and then you can alter the ice output via the user-friendly touchscreen interface. 3 to 4 minutes later, you’ll have pumpable ice to apply on all of your products without any shoveling or added physical labour.

nanoICE provides tangible ROI

nanoICE is the first machine with a tangible return on investment and is scalable for a variety of industries. It uses up to 70% less energy and up to 90% less refrigerant charge when compared to current conventional ice machines. This efficiency is because you need far less nanoICE to do the same cooling job as other forms of ice.

As it simultaneously hydrates and chills the product, nanoICE reduces shrinkage and prevents product weight loss. Therefore, nanoICE improves all aspects of shelf life (appearance, nutritional value, and taste), optimizes production costs and increases food quality.

Flake ice, slurry ice or nanoICE: how to choose the best fit for you

Regardless of being an seafood harvester, aquaculture producer, processor or distributor, you will always face the challenge of preserving your products for longer and ensuring that you sell them for the best price possible. You need an accessible, easy to use and high-quality solution to keep the products fresh.

So, what are your options for the freshest results?

1. Flake Ice

Flake ice the oldest and most conventional cooling solution used in the seafood industry. Sometimes called frosty or chip, the flake ice is essentially frozen water that you need to shovel before you apply it to your product. Flake ice’s large chips have a lower surface area which results in an uneven cooling distribution. It is particularly abrasive to delicate perishables as flake ice has sharp edges which cause bruising, scratching and breakage which results in a lower demand product.

The notable upside is it is always the cheapest and most easily accessible option for you, but at the expense of increased weight and nutrition loss.

2. Slurry ice

Liquid ice solutions like Slurry Ice (sometimes called gel ice), use small ice crystals to absorb heat from fresh products. They have good flow properties and are easily distributed through conventional pumps to create a uniform contact with the product surface. This is a step up from flake ice, but it lacks the deepest level of cooling transfer to products. This sometimes results in the desire to use other additives to impart better cooling which is becoming less and less desirable by consumers.

The major drawback of these systems is that they are significantly larger, more expensive, and less friendly to operate than most other commercial ice machines.

3. NanoICE-Icemachines

NanoICE is a true revolution in fresh food preservation. This is a unique technology that uses minuscule ice particles to help you keep food fresh for longer, while drastically reducing bacterial growth and spoilage. It is made entirely of sea water or fresh water with salt and does not require any additional chemicals to work efficiently.

Since the particles are less than a micron in size, they create a deep level contact with the product and lower the temperature more effectively than any others ice solutions on the market.

Also, nanoICE is silky soft it makes it a perfect fit if you want to preserve fresh perishable materials that are extremely delicate like oysters, langoustine, crab but also has a fantastic result on all fish. Additionally, it does not damage or bruise products – whether we’re talking about seafood, fruits, vegetables, poultry or meats.

Do you want to increase the shelf-life of your products without any loss of sellable weight?

See what else nanoICE has to offer and send us a quick message if you have any questions!
